Existem várias receitas de ambrosia e com consistências e modo de fazer completamente diferentes. A Ambrosia dos ingleses é assim, com frutas e sour cream. Algumas tem um gosto de ovo bem acentuado e essas já não me atraem.
Já comi deliciosas ambrosias como a da mãe de minha colega Lea, lá de São Borja que é muito parecida com a receita que uso há anos, do meu conterrâneo José Antônio Pinheiro Machado apresentador do programa Anonymys Gourmet.
Essa ambrosia tem gosto de doce de leite. Leva uma lata de leite condensado mas uso apenas ¾ dela. Gosto de deixá-la mais enxuta por isso deixo-a cozinhando por bastante tempo e sempre de olho para não grudar no fundo da panela. Como podem ver, requer uma certa atenção.
Para uma ambrosia sem lactose basta substituir o leite condensando e leite de vaca por pelo de soja.
Ambrosia do Sul
Ingredientes:
1 xícara de açúcar
6 ovos
1 xícara e meia de água
1 rama pequena de canela
1 colher de manteiga
1 xícara e meia de leite
1 lata de leite condensado
Preparo:
Primeiro coloque o açúcar na panela e leve ao fogo baixo até derreter completamente o açúcar e ficar na cor caramelo. Acrescente a água (nesse momento o açúcar vai endurecer) e deixe fervendo até o cristalizado de caramelo derreter. Mexa de vez em quando. Coloque a manteiga e deixe abrir a fervura.
Bata os ovos, claras e gemas, e quando abrir a fervura, acrescente os ovos batidos. Neste momento vão se formar grumos e bolotas, mexa com cuidado para não desmanchá-los. Coloque a rama de canela. Deixe abrir a fervura novamente.
Misture o leite condensado com o leite e acrescente à panela. Espere abrir novamente a fervura e diminua o fogo. Se os grumos ou bolotas ficarem muito grande, com um garfo, vá desmanchando para ficar em tamanhos pequenos.
Deixe cozinhar por um bom tempo, sempre cuidando para não grudar no fundo da panela, por isso mexa com cuidado e deixando reduzir o leite.
Quando estiver grossinha e enxuta, deslique o fogo e deixe esfriar.
Coloco em vidros tipo de compota e guarde na geladeira.

Voce sempre acerta! Eu ando louca pra comer uns doces caseiros e esses dias lembrei de uns potes de ambrosia que minha mae comprou em Minas Gerais ha um milhao de anos atras, e passamos o mes (ou alguns, eram varios potes) comendo com queijo caseiro, bem branquinho…me deu saudades e agua na boca! Daqui uns dias eu faco essa sua, soh estou esperando o marido se animar a fazer uns exercicios na bicleta (como eu disse, logo ele sai rolando de tanto doce que tenho feito…)
